Summer cake – Nyári torta

My birthday present with the gift note “Happy cooking and happy blogging!” arrived on Friday afternoon.  I could not have been happier!  The newest Nigel Slater cookbook A Year of Good Eating: The Kitchen Diaries III, sent from Great Britain, ordered by my son.  Thank you, Dávid!

It’s a chilly Sunday morning in Seattle.  The sun might come out later but it’s not going to be warm.  I am daydreaming about summer!  For today’s impromptu baking it’s going to be Nigel’s “Summer cake” from July 17, with a few little changes from the original recipe: 300 g frozen raspberries instead of 150 g loganberries and 150 g blackcurrants, ground walnuts instead of ground almonds.  This is the first recipe I am making out of the book’s more than 250.  The ingredients are – of course – in metric.  I hope you have a scale and after you’ve gathered the ingredients, you are ready to bake this cake.  It’s simple and unfussy, a delicious winner especially as Nigel says “eaten warm, almost straight from the oven”.

for the crumble crust
butter – 80 g
all-purpose flour– 80 g
demerara sugar – 80 g
a little water

for the base
butter – 180 g
granulated sugar – 180 g
eggs – 2
all-purpose flour – 115 g
ground almonds – 150 g

for the fruit
loganberries or raspberries – 150 g
blackcurrants – 150 g

Preheat the oven to 180 °C (350 °F).  Line a shallow cake pan, about 28×18 cm (11×7 in), with parchment paper.

For the crumble, rub the butter into the flour with your fingertips, then stir in the demerara sugar.  It should look like coarse breadcrumbs.  Add a couple of teaspoons of water and shake the bowl to let the mixture come together into various sized crumbs.

For the cake, beat the butter with the granulated sugar together until pale and fluffy (in a kitchen mixer with the paddle attachment it takes about 5 minutes).  Beat the eggs lightly with a fork and add them a little at a time to the mixture.  Gently and briefly stir in the flour and the ground almonds.  Transfer the cake mixture to the cake pan and smooth it flat.  Scatter the berries over the surface, then loosely add the crumble.  Bake for about 60 minutes.  Leave in the pan to settle for a while before cutting into thick slices.

Péntek délután születésnapi ajándékot kézbesített számomra az egyik futárszolgálat.  A kísérőlapon ez állt: “Kellemes főzést és kellemes blogolást!”  Nem is lehettem volna boldogabb!  Nigel Slater legújabb szakácskönyvét, melynek címe A Year of Good Eating: The Kitchen Diaries III, egyenesen Nagy-Britanniából rendelte a fiam.  Köszönöm, Dávid!

Hűvös vasárnap reggel van Seattleben.  Majd később talán kisüt a nap, de nem lesz meleg.  A nyárról álmodozom!  A mai rögtönzött sütéshez Nigel könyvéből (ami egyben napló is) a július 17-i nyári tortát választom.  Kicsit változtatok a recepten: 300 g fagyasztott málnát használok a javasolt 150 g kaliforniai szedermálna és 150 g feketeribizli helyett, s az őrült mandulát darált dióval helyettesítem.  Ez az első recept, amit a könyvben levő több mint 250-ből kipróbálok.  A mennyiségeket természetesen grammokban közli a könyv.  Remélem van konyhai mérleged, s ha összekészítetted a hozzávalókat, te is nekiállhatsz a sütésnek. Ezt a tortát igazán egyszerű elkészíteni, s különösen finom, ha a sütőből kivéve, még melegen fogyasztjuk.

a morzsatésztához
vaj – 80 g
finomliszt – 80 g
demerara nádcukor – 80 g
kevés víz

a tésztához
vaj – 180 g
kristálycukor – 180 g
tojás – 2
finomliszt – 115 g
darált mandula – 150 g
kaliforniai szedermálna vagy málna – 150 g
fekete ribizli – 150 g

A sütőt előmelegítjük 180 °C-ra.  Egy alacsony, kb. 28×8 cm-es szögletes tortaformát kibélelünk sütőpapírral.

A morzsatésztához a vajat elmorzsoljuk a liszttel, majd összekeverjük a demerara cukorral.  Hozzáadunk két kiskanálnyi vizet, s a tálat kicsit megrázogatjuk, hogy a keverékből különböző méretű morzsa képződjön.

A tortához a vajat a kristálycukorral habosra keverjük (elektromos mixerrel ez kb. 5 perc).  A tojásokat villával enyhén felverjük, apránként a cukros vajhoz adjuk, majd lazán hozzákeverjük a lisztet és a darált mandulát.  A masszát a tortaformába simítjuk.  Tetejére halmozzuk a bogyós gyümölcsöt, egyenletesen eligazítjuk, majd megszórjuk a vajas morzsával.  Kb. 60 percig sütjük.  A sütőből kivéve pár percig a formában pihentetjük, majd vastag szeletekre vágjuk.
