Walnut sponge moons – Diós piskótaholdak

Easy, delicious sponge, not very sweet; fantastic with tea or coffee.  One of my favorites.  The recipe comes from the Hungarian cookbook Sütemény és torta (Cookies and cakes) by Mari Lajos and Károly Hemző.  The sponge could be cut into any shape but I like these little moons.

I use a regular circular cutter and move it to create moon shapes (if you have a moon shape cutter, feel free to use it).  There will be some leftover irregular cuttings, but don’t worry, these pieces make a perfect topping for ice cream or yogurt.

eggs – 3
all-purpose flour – 250 g (2 cups)
granulated sugar – 250 g (1 cup + 3 tablespoons)
butter – 100 g (1 stick)
milk – 100 ml (½ cup)
baking powder – 20 g (6 teaspoons)
salt – a pinch
walnuts – 100 g (3.5 oz)

Preheat the oven to 180 °C (350 °F).  Grease a jelly roll pan and dust with flour or line it with parchment paper.  Chop the walnuts into rough pieces.  Separate the eggs.

In the bowl of an electric mixer, cream together the butter, egg yolks, and sugar until fluffy.  Mix the baking powder with the flour, and alternating with the milk, add to the egg yolk mixture in small batches.

Beat the egg whites until stiff peaks form, then carefully – with a wooden spoon, not with the mixer – combine it with the egg-flour mixture.  Pour the batter into the prepared pan.  Spread the chopped walnuts on top.  Bake for 30-35 minutes (don’t open the oven in the first 20 minutes).  Slightly cool in the pan.  Transfer to a cutting board.  With a round cutter, cut out moon shapes.

Könnyen elkészíthető vajas piskóta, finom, nem nagyon édes; teával vagy kávéval egyszerűen fantasztikus.  Az egyik kedvencem.  A recept Lajos Mari és Hemző Károly Sütemény és torta c. szakácskönyvéből való.  A piskótatészta bármilyen alakzatokra kiszaggatható, de szerintem a kis holdacskák igen aranyosak.  Én egyszerű pogácsaszaggatót használok, ezzel araszolgatok holdakat vágván ki a tésztából (persze, ha van hold alakú szaggatód, használd nyugodtan).  Természetesen szabáshulladék is lesz, de nincs gond, mert felhasználhatod pl. fagylalt vagy joghurt feltéteként.

tojás – 3
liszt – 250 g
kristálycukor – 250 g
vaj – 100 g
tej – 100 ml
sütőpor – 20 g
só – egy csipet
dió – 100 g

A sütőt előmelegítjük 180 °C.  Egy tepsit kivajazunk, kilisztezünk, vagy kibélelünk sütőpapírral úgy, hogy az hosszanti irányban mindkét oldalon lelógjon.  A diót durvára vágjuk.  A tojásokat kettéválasztjuk.

A szobahőmérsékletű vajat habosra keverjük a cukorral és a tojások sárgájával (elektromos mixerrel ez gyorsan megy).  Felváltva hozzáadjuk a sütőporral elkevert lisztet és a tejet.

A tojásfehérjéket egy csipet sóval kemény habbá verjük, aztán óvatosan a lisztes-vajas keverékhez adjuk (én fakanalat használok a keveréshez, nem a mixert).  A masszát az előkészített tepsibe öntjük, tetejét megszórjuk a vagdalt dióval. 30-35 alatt készre sütjük (a sütő ajtaját 20 percig tilos kinyitni).  A tepsiben hagyjuk félig kihűlni, aztán sütőpapírral együtt kiemeljük a tepsiből egy gyúródeszkára.  Pogácsaszaggatóval félholdakat vágunk ki belőle.
