Quick kohlrabi and apple slaw – Gyors almás karalábésaláta

Kohlrabi is one of my favorite vegetables.  Paired with apples, a quick slaw – full of vitamins – can be created from it.  It’s refreshing and crunchy, simple and very delicious on its own, or as a side dish.

kohlrabi – 1 middle size
apple – 1 small
lemon – 1
olive oil – 2 tablespoons
salt to taste

Peel and grate the kohlrabi.  Core and grate the apple.  Toss them together in a bowl, squeeze a lemon over it, and drizzle with the oil.  Season with salt.  Mix it together.  Serve immediately.

  1. This is just exceptional! I’ve never quite known what to do with kohlrabi. We used to get it in our CSA box, so I tried different ways to eat it, but none that made me really look forward to the next experience. This salad is amazing! The apples and lemon with the kohlrabi together form an almost fragrant blend of flavors. Very addicting! Thanks for sharing another great recipe!

    • You are welcome, Katey. I’m so glad you liked it. I want everyone to know and love kohlrabi. Next season, we will have you over for some fresh slices and to try it in some other forms (like stuffed). Steve suggests to try to develop a recipe maybe for kohlrabi scones.
