Gerbeaud pastry – Gerbeaud avagy „zserbó” szelet

Would I consider baking for a wedding reception?  I enthusiastically said yes, when my friend Tricia asked me to bake for her.  She knew I had experience with this – earlier I had baked for my son’s wedding.

Throughout the years we have known each other, she has sampled and liked many of my cookies.  But what would be good and unique for her wedding reception?  We decided on using three different types of goods – chocolate, jam, and walnuts – as main ingredients.  Even though previously she hadn’t tasted the salted chocolate-rye cookies and the orange linzer cookies filled with jam, she trusted me; she liked what she saw on my blog.  And I was to surprise her with some kind of walnut cookies.  I chose the famous Hungarian Gerbeaud pastry for two simple reasons: it’s easy to prepare and it’s very delicious.

The original recipe was prepared by Emil Gerbeaud, a Swiss pastry chef, who owned and operated a coffee house in Budapest, Hungary since 1884.  The famous Gerbeaud Confectionary even in these days has this pastry on its repertoire.  They describe it as “sweet pastry filled with apricot jam and a mixture of confectioner’s sugar and ground walnuts, topped with chocolate icing”.  My recipe comes from the Hungarian cookbook Magyaros étel by Mari Lajos.

for the dough
milk – 50 ml
granulated sugar – 2 teaspoons
fresh yeast – 20 g
all-purpose flour – 500 g + a little more
unsalted butter  – 250 g + a little more
powdered sugar – 100 g
egg – 1
vanilla sugar – 10 g
salt – a pinch
sour cream – 100 ml

for the filling
ground walnuts – 250 g
powdered sugar – 200 g
apricot jam – 250-300 g

for the glaze
chocolate – 50 g
butter – 100 g
cocoa powder – 3 tablespoons
milk – 2 tablespoons

Dissolve the yeast and 2 teaspoons of sugar in lukewarm milk.  Let it sit until it’s foamy.  Place the flour into a large bowl and cut the butter into it.  Use a pastry blender or your fingertips to break up the butter until it’s crumbly, then add the powdered sugar, yeast mixture, egg, vanilla sugar, salt, and sour cream to form dough.  Place the dough on a lightly floured board, knead for a few minutes, gather into a ball, and divide into 3 equal parts.  Cover with a clean dish towel and let it rise for 30 minutes.
Preheat the oven to 180 °C (350 °F).  Butter a 13×9-inch baking pan and dust it with flour.  For the filling, mix together the ground walnuts and powdered sugar in a bowl.

On the board, roll out the first part of the dough to the size of your pan, then roll it up on the rolling pin and lift it into the baking pan.  Unroll the dough and shape it to the pan pressing it into the corners to fit.  Spread half of the jam on the dough and sprinkle evenly with half of the walnut-sugar mixture.  Roll out the second piece of the dough and place on top of the first one.  Spread with the rest of the jam and sprinkle with the remaining walnut filling.  Roll out the third part of the dough and place on top.  Poke little holes with a fork into it to prevent bubbles as it bakes.  Bake for 35-40 minutes.  Cool in the pan.  Before glazing it, turn out the pastry to a board by placing the board over the baking pan and flipping it in one motion.

Melt the chocolate, cocoa powder, butter, and milk in a small pan over steaming hot water.  Pour over the top of the pastry lukewarm and spread evenly.  After the chocolate sets, cut into slices, using a sharp knife dipped into hot water.  Makes around 30-40 slices.

Amikor barátnőm Tricia megkért, hogy süssek az esküvőjük utáni fogadásra, lelkesen mondtam igent.  Tudta, van ebben már tapasztalatom, hisz a fiam esküvőjére is én sütöttem a süteményeket.  Mióta ismerjük egymást Tricia-val, a hosszú évek alatt sok különféle süteményemet kóstolta és szerette meg.  De mi lenne jó és különleges az esküvői fogadásra?  Háromféle sütemény, egy csokoládés, egy lekváros és egy diós mellett döntöttünk.  Annak ellenére, hogy Tricia-nak eddig nem volt lehetősége megkóstolni a sós csokoládés rozslisztes süteményemet és a narancsos töltött linzer kekszemet, érezte, nem fog csalódni – látta a fotókat és olvasta a recepteket a blogomon.  A diós sütemény kiválasztását rám bízta, lepjem meg őt, mondta.  A híres-neves zserbószeletet választottam két ok miatt is: viszonylag egyszerű az elkészítése és nagyon finom.

Az eredeti receptet Gerbeaud Emil, svájci cukrászmester kreálta, aki 1884-től kezdve volt a budapesti Gerbeaud kávéház tulajdonosa.  A híres cukrászda még ma is repertoárján tartja a zserbószeletet, amit így jellemeznek: “élesztős tészta főzött sárgabaracklekvárral, porcukor és darált dió keverékével töltve, tetején csokoládémáz”.  Én Lajos Mari “Magyaros étel” című szakácskönyvéből sütöm a zserbót.

az omlós tésztához
tej – 50 ml
kristálycukor – 1 teáskanál
élesztő – 20 g
liszt – 500 g + extra a tészta nyújtásához és a tepsihez
vaj – 250 g + extra a tepsihez
porcukor – 100 g
tojás – 1
vaníliás cukor – 10 g
só – egy csipet
tejföl – 100 ml

a töltelékhez
darált dió – 250 g
porcukor – 200 g
sárgabaracklekvár – 250-300 g

a mázhoz
csokoládé – 50 g
vaj – 100 g
kakaópor – 3 evőkanál
tej – 2 evőkanál

A tejet meglangyosítjuk, elkeverjük a kristálycukorral és az élesztővel, s meleg helyen felfuttatjuk.  A lisztet elmorzsoljuk a vajjal, hozzáadjuk a porcukrot, az élesztős tejet, a tojást, a vaníliás cukrot, a sót és a tejfölt.  Tésztát gyúrunk belőle, három részre osztjuk, és tiszta konyharuhával letakarjuk.  Harminc percig kelni hagyjuk.

A sütőt előmelegítjük 180 °C-ra.  Kivajazunk, kilisztezünk egy kb. 30×40 cm-es tepsit.  A töltelékhez a darált diót összekeverjük a porcukorral.

Az egyik tésztacipót enyhén lisztezett gyúródeszkán kinyújtjuk, feltekerjük a sodrófára, s ennek segítségével a tepsi aljára terítjük.  Megkenjük a baracklekvár felével és rászórjuk a cukrozott dió felét.  Kinyújtjuk a másik cipót, az első lap tetejére tesszük, megkenjük a maradék baracklekvárral és megszórjuk a maradék cukrozott dióval.  Ráhelyezzük a harmadik kinyújtott tésztalapot.  Megszurkáljuk villával, hogy fel ne hólyagosodjon.  35-40 percig sütjük.  A tepsiben hagyjuk kihűlni, majd egyben kifordítjuk egy deszkára.

Közben a csokoládét a kakaóporral és a vajjal pára felett felolvasztjuk.  Hozzákeverjük a tejet.  Langyosra hűtjük és bevonjuk vele a süteményt.  Miután a csokoládémáz megdermedt, forró vízbe mártott késsel felszeleteljük.  (Ha nincs kedvünk mázat készíteni, olvasszunk fel 200 g tortabevonó csokoládét.)  Kb. 30-40 szelet süteményt kell kapnunk.
