Simple roasted cauliflower with thyme – Egyszerű kakukkfüves sült karfiol

“Cauliflower is nothing but cabbage with a college education”, said Mark Twain.  “In the sixteenth century, this vegetable was known as Cyprus cabbage”, writes Nigel Slater in Tender.  According to some historians, this member of the cabbage family indeed originates from Cyprus.

We can easily learn interesting facts about it, including its health benefits.  Looks like a big brain; can be white, ivory, violet, or green; it’s high in fiber and is full of vitamin C; it’s delicious eaten raw in salads (the leaves are edible too), steamed, boiled, fried, or roasted.  Here is a simple way for roasting it.

First, let’s see what’s needed, then the method (you don’t really need a recipe here).

cauliflower, butter, olive oil, balsamic vinegar, salt, ground black pepper, fresh thyme, Parmesan (optional)

Preheat the oven to 200 °C (400 °F).  Butter a roasting pan with 1-2 tablespoons of soft butter.  Break a head of cauliflower into florets, place them in the pan, and drizzle with 2 tablespoons of balsamic vinegar and 2-3 tablespoons of olive oil.  Toss to combine, then season with salt and pepper to taste, and add some thyme.  Roast for 10-15 minutes, then turn the florets, and roast for 10-15 more minutes.  Serve with Parmesan on top if desired.

„A karfiol nem más, mint egyetemi végzettségű káposzta” – mondja Mark Twain.  Nigel Slater Tender című könyvében ezt olvassuk: „A 16. században ciprusi káposztaként ismerték a karfiolt.”  Egyes történészek szerint ez a káposztafélék családjába tartozó zöldségféle, ami kinézetre hasonlít az agyra, valóban Ciprusról származik.  Különféle forrásokból sok más érdekességet is megtudhatunk róla, az egészségre gyakorolt hatását is beleértve.  A karfiol lehet fehér, elefántcsont színű, lila vagy zöld.  Rostokban és C-vitaminban gazdag.  Fogyasztjuk párolva, főve, rántva, megsüthetjük a sütőben, de nyersen is finom, főleg salátákban (ne feledjük: a karfiol levelei is ehetőek).

Lássuk előbb a hozzávalókat, majd a munkamenetet (receptre nincs is igazán szükség).

A sütőt előmelegítjük 200 °C-ra.  Egy tűzálló edényt kivajazunk ki 1-2 kanálnyi puha vajjal.  Egy karfiolt rózsáira szedünk, a sütőedénybe tesszük, s meglocsoljuk 2 kanál balzsamecettel és 2-3 kanál olívaolajjal.  Összeforgatjuk, aztán sózzuk, borsozzuk, s megszórjuk kakukkfű levélkékkel.  10-15 percig sütjük, megkeverjük, s további 10-15 percre visszatesszük a sütőbe.  Tálaláskor megszórhatjuk reszelt parmezán sajttal.
