Hungarian scrambled eggs – Magyaros tojásrántotta

This dish is definitely different than your regular scrambled eggs.  What makes them different?  The original Hungarian smoked sausage and the Hungarian paprika spice that is used.  Both a little bit on the spicy side, if possible.

If you might not find these ingredients in your regular grocery store together with some good Hungarian pepper, try to get as close as possible to them.  Shop at a farmers’ market for a good quality pepper and eggs.  Find a local butcher for dry sausages or order them online (in the USA, Bende is a good choice for authentic Hungarian goods).  And have some good quality peasant bread or toast on the side when you eat these freshly scrambled eggs.  Served with a fresh seasonal salad it can even be a one-pot meal.

smoked bacon – 25 g (about 1 oz)
onion – 1 middle size
bell pepper – 1 middle size
tomatoes – 1-2 middle size
Hungarian paprika spice – ½ teaspoon
dry Hungarian smoked sausage – 50 g (about 1.8 oz)
eggs – 4
milk – a little
salt – to taste

Cut the bacon, onion, bell pepper, and tomatoes into small pieces.  Sauté the bacon with the onion in a saucepan.  Sprinkle with the paprika, then add the pepper, tomatoes, and sausage.  Salt to taste.  Sauté until the pepper is soft.  In a bowl, beat the eggs with a little milk and salt, then pour over the bacon-sausage-pepper base and stir until the eggs are just softly set.  Serve right away.  Enough for 2.

Ez a tojásrántotta más, mint a szokásos.  Az eredeti magyar füstölt kolbász és pirospaprika teszi mássá.  Jó, ha mindkettő a csipős fajtából való.  Ha netán nem tudsz eredeti magyar kolbászhoz és jó minőségű magyar pirospaprikához hozzájutni ott ahol élsz, próbálj meg legalább valami hasonlót beszerezni.  Paprikát és tojást vásárolj a helyi piacon.  Keress egy helyi hentest, ott biztos van valamilyen paprikás füstölt kolbász, vagy rendelj a neten (az Amerikai Egyesült Államokban az Illinois állambeli Bende cég a magyar élelmiszerek jó lelőhelye).  A jó minőségű parasztkenyér elengedhetetlen a frissen tálalt tojásrántottához.  Friss vegyessalátával akár egytálételként is kínálható.

füstölt szalonna – 25 g
hagyma – 1 közepes fej
zöldpaprika – 1 közepes
paradicsom – 1-2 közepes
pirospaprika – késhegynyi
száraz füstölt kolbász – 50 g
tojás – 4
tej – egy kicsi
só – ízlés szerint

A szalonnát, a hagymát, a paprikát és a paradicsomot apróra felkockázzuk, a kolbászt vékonyan felkarikázzuk.  A szalonnát üvegesre pirítjuk, megfonnyasztjuk benne a hagymát, megszórjuk pirospaprikával, majd hozzáadjuk a kolbászt, a zöldpaprikát és a paradicsomot.  Az egészet puhára pároljuk.  Közben a tojásokat egy tálban egy kis tejjel és ízlés szerinti sóval felverjük, majd ráöntjük a paprikás-paradicsomos kolbászra.  Gyakran kevergetve sütjük, de csak annyira, hogy a tojás rezgős maradjon.  Azonnal tálaljuk.  A recept 2 személyre szól.
