Pistachio cake with cocoa – Pisztáciás kakaótorta

What do you do if you suddenly crave something sweet?  Try to find something sweet in your pantry?  Run to a store to buy something?  Start baking?  Maybe cookies or even a cake?  Yes, a cake!  The type that doesn’t require any filling.  Then you can justify your baking as preparing snacks or the next day’s breakfast.  Yes, seriously.  We don’t even need a special occasion to bake a cake.  If the ingredients are available, we are ready to start.

One of my favorite Hungarian cookbooks from the series by Mari Lajos is entitled Sütemény és torta (Cookies and Cakes).  This is the book for which I reach first most of the time when I want a suitable recipe for quick and easy baking.  This buttery spongy cake comes from this cookbook.  The pistachios and the raisins soaked in rum make it quite special (of course, you can skip the rum is you wish).  Eat the cake with tea or coffee in the afternoon or – don’t be afraid to do so – even for breakfast.  This cake is one of the simplest out there, it’s very delicious, and almost cannot be ruined.  Give it a try and let me know how your cake turned out.  I appreciate your feedback.

butter – 7 tablespoons (100 g)
powdered sugar – 2 cups (200 g)
eggs, separated – 4
milk – 4 tablespoons (50 ml)
all-purpose flour – 1½ cups (200 g)
baking powder – 5 teaspoons (20 g)
cocoa powder – 1 tablespoon
pistachios – (3.7 oz) 100 g
rum – 4 tablespoons (50 ml)
raisins – 4 oz (100 g)

Preheat the oven to 350 °F (180 °C).  Grease and flour a round cake pan.  Soak the raisins in the rum, then drain them.  Chop the pistachios into pieces.  Separate the eggs.

Cream the butter and sugar together until fluffy, then add the yolks one at a time.  In small batches, add the milk, flour, baking powder, cocoa powder, pistachios, and raisins.  Mix well.  Whisk the egg whites until stiff peaks form, and carefully mix into the batter.

Spoon into the prepared cake pan and bake for 40-45 minutes, until a toothpick inserted into the center comes out clean.  Cool in the cake pan, then remove the ring, and place the cake on a platter.  Dust with powdered sugar if you desire.

Mit szoktál csinálni, ha hirtelen valami édesre fáj a fogad?  Elkezdesz keresgélni valami édesség után?  Elfutsz a boltba valami finomságot venni?  Nekiállsz sütni?  Talán valami aprósütit vagy épp tortát?  Igen, tortát!  Olyan töltetlen fajtát.  Aztán azt mondod magadnak, ez lesz a nassolnivakó, meg a másnapi reggeli.  Tényleg, komolyan.  Nincs szükég különleges alkalomra ahhoz, hogy tortát süssünk.  Ha kéznél vannak a hozzávalók, már kezdhetjük is.

Egyik kedvenc süteményes könyvem a Lajos Mari féle sorozatból a Sütemény és torta című.  Általában ezt szoktam elsőként fellapozni, ha egy–egy recept után kutatok.  Innen való ez a vajas kakaós piskótatorta, amit a pisztácia és a rumban megáztatott mazsola tesz különlegessé (persze a rum el is hagyható).  Délutáni, de akár reggeli teához vagy kávéhoz is remek.  Ez a torta hihetetlenül egyszerű, nagyon finom és szinte elronthatatlan.  Próbáld ki a receptet és tudasd, hogy sikerült a tortád.  Előre is köszönöm a visszajelzést.

vaj – 100 g
porcukor – 200 g
tojás – 4
tej – 50 ml
liszt – 200 g
sütőpor – 20 g
kakaó – 1 evőkanál
pisztácia – 100 g
rum – 50 ml
mazsola – 100 g

A sütőt előmelegítjük 180°C-ra.  Kilisztezünk, kivajazunk egy kerek tortaformát.  A mazsolát rumban megáztatjuk, majd lecsepegtetjük.  A pisztáciát durvára vágjuk.  A tojásokat kettéválasztjuk.

A vajat habosra keverjük a porcukorral.  Egyenként hozzáadjuk a tojássárgákat, majd apránként a tejet, a lisztet, a sütőport, a kakaót, a pisztáciát, és a mazsolát.  Alaposan összekeverjük.  A tojásfehérjéket kemény habbá verjük, s lazán a masszához adjuk.

A tortamasszát az előkészített formába simítjuk.  40-45 perc alatt készre sütjük.  A formában hagyjuk kihűlni, majd lehúzzuk a tortakarikát és a tortát egy csinos tálra tesszük.  Tetejét megszórhatjuk porcukorral.

    • Huyen, you just gave me an idea to write a post about cocoa powder (I hope soon). Until then, this time I used Ghirardelli cocoa, that’s what we had at home.

  3. I really love this cake! I’m a fan of rum, so I would probably as more an hour or so before serving, but it’s delicious as is. The combination of raisins and chocolate and pistachios is not something I’ve had before. Brilliant!
