Hungarian cucumber salad – Magyaros uborkasaláta

When I was growing up, in the summer, cucumber salad used to be on the menu in our house almost daily.  We ate it as an accompaniment to fried chicken or a roast, but I liked it the most with a simple Hungarian potato dish made with sweet paprika spice.

We grew lots of cucumbers in our big vegetable garden both for our own consumption and for sale.  Growing your own cucumbers means that you need to be around to pick them regularly.  The best is to pick them in the early morning before the heat of the sun makes the work too uncomfortable.  You are, after all, close to the ground, so in a big heat – which by the way is very good for the cucumbers because they grow faster – it’s not a pleasant thing.  You are also wearing gloves because the cucumbers will otherwise irritate the skin on your hands; but in the heat wearing the gloves make your hands sweaty.  Needless to say, cucumber picking can be an interesting experience.

As for the salad, I make it most frequently in a simple way, the way I learned from my mother.  The dressing is very light, the ingredients are very basic.  Traditionally, my mother would always peel the freshly picked cucumbers, but I sometimes don’t bother with peeling, especially if the skin is thin.  For this salad, you can use English cucumbers or pickling cucumbers.

cucumber – 500 g (1 pound)
white onion – 1 small
salt –  to taste
white wine vinegar – 1-2 tablespoons
garlic – 1-2 cloves
sugar – about 1 teaspoon
ground black pepper – to taste
sweet red Hungarian paprika spice – to taste (about ½ teaspoon)

Wash and dry the cucumbers, cut the two ends, then slice them thinly (the best is to use a mandolin).  Clean the onion, then grate or slice thinly, or chop finely.  Toss the sliced cucumbers with the onion in a bowl, salt lightly, stir, and leave to stand for half an hour.

For the dressing, combine a small amount of water (about 50 ml = 0.2 cups) with the vinegar, crushed garlic, sugar, and black pepper in a small bowl, and stir until the sugar dissolves.  Pour over the cucumbers – there will already be a juice from the salted cucumbers – and toss lightly.  Just before serving, sprinkle with red paprika.

Variations
1) Top the salad with a dollop of sour cream immediately before consumption.
2) Slice one or two green peppers and add to the cucumbers.
3) In place of vinegar, use lemon juice.  Omit the water, and sprinkle the salad with 1-2 tablespoons of olive oil.
4) Vary the proportions of the individual ingredients in the dressing to your own taste, but it should be slightly sour.
5) Dill cucumber salad: Mix 1 tablespoon of finely chopped dill with 150 ml (1/4 pint) sour cream, 1 teaspoon of sugar, 2 tablespoons of white wine vinegar, and a little salt.  Add to the sliced cucumbers, stir, and chill for at least one hour.

Gyerekkoromban nyáron, uborkaszezonban, nálunk szinte naponta volt uborkasaláta.  Sült csirkéhez vagy más sült húshoz tálaltuk, de én legjobban a krumplipaprikással szerettem.  Nagy kertünk volt.  Rengeteg uborkát termesztettünk saját szükségletre és eladásra is.  Ha valaki uborkát termel, főleg nagyban, az azzal jár, hogy otthon kell lenni a rendszeres szedéshez.  Az uborkát a kora reggeli órákban a legjobb szedni, amikor még a tűző nap nem teszi kényelmetlenné a munkát.  Elvégre a szedés a talajhoz közel történik, s ez a nagy melegben igencsak kellemetlen.  Mellesleg az uborka nagyon szereti a meleget, ilyenkor gyorsabban nő.  A szedés általában kesztyűben történik, mert az uborka levelei és a szára ingerlik a kézbőrt, de a nagy melegben a kéz megizzad a kesztyűben.  Mondanom sem kell, az uborkaszedés igencsak érdekes élmény.

Ami magát a salátát illeti, leggyakrabban az itt bemutatott nagyon egyszerű módon készítem, úgy, ahogy édesanyámtól tanultam.  Az öntet könnyed, a saláta hozzávalói alapvetőek.  Édesanyám hagyományosan mindig meghámozta az uborkát, amit frissen szedett a kertben; én azonban gyakran rajta hagyom a héját, főleg akkor, ha elég vékony.  A salátához használhatunk kígyóuborkát vagy befőzésre való uborkát.

salátauborka – 500 g
hagyma – 1 kis fej
só –  ízlés szerint
fehér borecet –  1-2 evőkanál
fokhagyma – 1 gerezd
cukor – kb. 1 kiskanál
őrölt fekete bors – ízlés szerint
édes nemes pirospaprika – ízlés szerint

Az uborkákat megmossuk, szárazra töröljük, két végét levágjuk és vékonyra legyaluljuk.  A hagymát megtisztítjuk és vékonyra felkarikázzuk (esetleg apróra vágjuk vagy lereszeljük).  Egy tálban összekeverjük az uborkát és a hagymát, besózzuk, s fél óráig állni hagyjuk.

Egy kevés vízben (50 ml) felhigítjuk az ecetet, hozzáadjuk a zúzott fokhagymát, a cukrot, ízlés szerinti sót és őrölt fekete borsot, s addig keverjük, míg a cukor teljesen fel nem olvad.  Ráöntjük az uborkára.  (Van aki az uborkát enyhén kinyomkodja, de én nem szoktam kicsavarni a levétől).  Ízlés szerint megszórjuk egy kevés pirospaprikával.

Variációk
1) A salátát közvetlenül fogyasztás előtt meglocsoljuk egy kevés tejföllel.
2) Egy-két megmosott, kicsumázott, felkarikázott zöldpaprikát adunk az uborkához.
3) Ecet helyett citromlét használunk, a vizet elhagyjuk; a salátát meglocsoljuk 1-2 kanál olívaolajjal.
4) Az öntet hozzávalóinak arányát saját ízlésünk szerint változtathatjuk, de ügyeljünk arra, hogy az öntet enyhén savanykás legyen.
5) Kapros uborkasaláta: 150 ml (1/4 pint) tejfölben elkeverünk 1 evőkanál finomra vágott kaprot, 1 teáskanál cukrot, 2 evőkanál borecetet, egy kis sót.  A legyalult uborkához keverjük és legalább egy órára hűtőbe tesszük.
