Buttermilk cake – Írós torta

This is not a super-sweet cake but it’s very flavorful and satisfying.  It’s made with buttermilk and whole wheat pastry flour, giving it a bread-like consistency.  When I found this recipe in Heidi Swanson’s book Super Natural Every Day, I liked it so much, I wanted to try it right away.

Heidi uses fresh plums – I used pluots (I had some in the freezer saved from our CSA fruit box).  Feel free to use any ripe fresh seasonal fruit.  She recommends eating it with maple-sweetened whipped cream – I had it with my tea without any cream and it was delicious.  If you have not baked with whole wheat flour, this cake is a good starting point.

whole wheat pastry flour – 310 g (2½ cups)
baking powder – 1 tablespoon
cane sugar – 70 g (½ cup)
sea salt – ½ teaspoon
eggs – 2
buttermilk – 355 ml (1½ cups)
unsalted butter, melted – 60 g (¼ cup)
grated zest of 3 lemons
plums, thinly sliced – 8-10
large grain sugar or turbinado sugar – 3 tablespoons

Preheat the oven to 200 °C (400 °F).  Butter and flour a 28 cm (11-inch) round tart pan.

Whisk together the flour, baking powder, cane sugar, and salt in a large bowl.  In a separate bowl, whisk together the eggs and the buttermilk.  Mix in the melted but not hot butter and the lemon zest. Add all of this to the flour mixture and stir briefly, until just combined.

Spoon the batter into the tart pan.  Scatter the plums across the top, then sprinkle with the large grain sugar.  Bake for about 20-25 minutes, or until the cake has set (a toothpick to the center should come out clean).

Ez nem egy túlontúl édes torta, de nagyon ízletes és laktató.  Íróval és teljes kiőrlésű liszttel készül, s emiatt kicsit kenyér jellegű.  Amikor rátaláltam erre a receptre Heidi Swanson Super Natural Every Day című könyvében, annyira megtetszett, hogy rögtön ki akartam próbálni.  Heidi friss szilvával süti a tortát – én pluotot használtam (volt még lefagyasztva az előfizetéses gyümölcsszállítmányunkból).  Természetesen bármilyen szezonális érett gyümölcs megfelel.  Heidi azt javasolja, kínáljunk a torta mellé juharsziruppal ízesített tejszínhabot.  Állíthatom, tea mellé nagyon finom csak úgy magában is.  Ha eddig még nem sütöttél teljes kiőrlésű liszttel, ez a torta jó kiindulópont.

teljes kiőrlésű liszt – 310 g
sütőpor – 1 evőkanál
nádcukor – 70 g
tengeri só – ½ teáskanál
tojás – 2
író – 355 ml
olvasztott vaj – 60 g
3 citrom reszelt héja
szilva, vékonyra szeletelve – 8-10
durva szemcsés kristálycukor vagy turbinado cukor – 3 evőkanál

A sütőt előmelegítjük 200 °C-ra.  Kivajazunk, kilisztezünk egy 28 cm átmérőjű kerek tortaformát.

A lisztet egy nagy tálban elkeverjük a sütőporral, a nádcukorral és a sóval.  A tojásokat egy másik tálban elkeverjük az íróval, hozzáadjuk az olvasztott, de nem forró vajat és a reszelt citromhéjat, majd mindezt laza mozdulatokkal a cukros liszthez keverjük.

A masszát egyenletesen elterítjük a tortaformában.  Tetejére rendezzük a szilvát és megszórjuk a kristálycukorral.  Kb. 20-25 perc alatt készre sütjük (érdemes tűpróbát végezni).
