Oven baked cherry crêpes – Cseresznyés palacsinta sütőben sütve

Do you like crêpes as much as I do?  These traditional Hungarian crêpes are my favorites, but sometimes I am short on time or not in the mood to fry them individually, especially in the morning.  Or when it’s hot out there in the summer.  Here is a version for those kinds of days.

Make the crêpe batter, mix your favorite – fresh or frozen – fruit into it, and bake it in the oven all at once, in one big piece.  It might taste a little bit different than individual thin crêpes, but this is indeed a good breakfast or dessert.   I had a lot of cherries recently, so it was only natural to use them for the crêpes.  Here is a little advice for when you pit the cherries: you might want to pit more than is needed and freeze them for the next baking.  Cherry pitting is fun, but it can be a messy business.

eggs – 3
milk – 200 ml (1¼ cups)
water ­– 100 ml (½  cup)
all-purpose flour – 200 g (1½ cups)
granulated sugar – 1-2 tablespoons
vanilla sugar – 1-2 tablespoons
salt – a pinch
cherries – 200 g (7 oz)

Preheat the oven to 200 °C (400 °F).  Line an 8 × 12-in baking dish with parchment paper.  Prepare the cherries by pitting them and cutting them in half.

Blend the eggs, milk, and water in a large bowl.  Gradually whisk in the flour, sugar, vanilla sugar, and salt until well combined.  Pour the batter in the prepared baking dish and scatter the cherries on the top.  Bake for 25 minutes.  Cut into squares to serve and dust with powdered sugar if desired.

Te is szereted a palacsintát­?  Nekem a hagyományos magyar palacsinta a kedvencem, néha azonban nincs időm és kedvem egyenként sütögetni, főleg ha reggelire szeretnék palacsintát enni.  Vagy épp a nagy nyári melegben.  Ime egy változat az ilyen napokra.  Keverd össze a palacsintatésztát, add hozzá a kedvenc gyümölcsödet (frisset vagy fagyasztottat), és süssd meg egyben a sütőben.  Bár ez a nagydarab, vastag palacsinta kicsit más ízűnek tűnhet, mint a vékony palacsinták, ennek ellenére valóban egy jó reggeli vagy desszert.  Mostanság jócskán volt itthon cseresznye, így természetesen ezt választottam gyümölcsként.  A cseresznye kimagozása jó mulatság, de egyben macerás, ezért érdemes mindjárt dupla adagot kimagozni, s lefagyasztani a legközelebi sütéshez.

tojás – 3
tej – 200 ml
víz ­– 100 ml
liszt – 200 g )
kristálycukor – 1-2 evőkanál
vaníliás cukor – 1-2 evőkanál
só – egy csipet
cseresznye – 200 g

A sütőt előmelegítjük 200 °C-ra.  Egy 20 cm × 30 cm méretű sütőedényt kibélelünk sütőpapírral.  Kimagozzuk és elfelezzük a cseresznyét.

A tojásokat egy nagy tálban elkeverjük a tejjel és a vízzel.  Állandó kevergetéssel hozzáadjuk a lisztet, cukrot, vanilias cukrot és sót.  A tésztát beleöntjük a sütőedénybe, s a tetejére szórjuk a cseresznyét.   25 perc alatt készre sütjük.  Négyzetekre vágva tálaljuk, s meghintjük porcukorral.
