Hungarian savory tart with bacon & sour cream – Szalonnás-tejfölös lepény

Delicious savory tart with bacon, preferably with lots of sour cream!  It’s so good especially warm on its own (instead of a pizza) or as an accompaniment to a hearty soup.  I adapted the recipe from one of my favorite Hungarian cookbooks Mai magyar konyha by Tamás Bereznay.

granulated sugar – 1 teaspoon
fresh yeast – 25 g (0.9 oz)
all-purpose flour – 500 g (1.1 lbs, about 4 cups)
salt – 10 g (2 teaspoons)
oil – 20 ml (4 teaspoons) + a little more for the baking sheet
lots of sour cream and good quality bacon – for topping

In a small bowl, dissolve the sugar and yeast in 2/3 cup lukewarm water.  Sift the flour into a large bowl, add the salt, oil, and yeasty water.  Stir well to bring the dough together, then knead it by hand on a lightly floured work surface (or in a stand mixer with the dough attachment).  If it is a little bit dry, add more water.  The dough should be smooth and elastic.  Place it in a bowl, cover with a dish towel, and rest it for 15 minutes in a warm place.

In the meantime, preheat the oven to 400 °F (200 °C).  Brush a big rectangular rimmed baking sheet with oil.  Cut the bacon into small uniform pieces.  On the floured work surface, knead the dough a little more by hand, and divide into two pieces.  If you are planning to bake only one tart at this time, wrap the second piece of dough in plastic, and store in the refrigerator for one day (or freeze it for later).  Roll out the dough to the size of your baking sheet and place on it.  Brush with the sour cream and top with the bacon pieces.  Bake until golden brown and crisp, about 30 minutes.

The fresh yeast could be substituted with about 2.5 teaspoons of dry yeast.

Finom sós lepény szalonnával és lehetőleg sok tejföllel!  Kitűnő csak úgy magában vagy egy jó leves kisérőjeként.  A recept az egyik kedvenc szakácskönyvemből való, címe „Mai magyar konyha” Bereznay Tamástól.

kristálycukor – 1 teáskanál
friss élesztő – 25 g
simaliszt – 500 g
só – 10 g
olaj – 20 ml
sok tejföl és jó minőségű húsos szalonna  –  a lepény tetejére

Egy kis tálban 1,5 dl langyos vízhez tesszük a cukrot és belemorzsoljuk az élesztőt.  A lisztet egy nagy tálba szitáljuk, hozzáadjuk a sót, az olajat és az élesztős vizet.  Kézzel vagy robotgéppel kidagasztjuk a tésztát.  Ha esetleg száraznak találnánk, egy kis vizet adunk hozzá.  Közepesen kemény, rugalmas tésztát kell kapnunk, amit aztán egy tálba teszünk, konyharuhával letakarunk és meleg helyen 15 percig pihentetünk.

Közben a sütőt előmelegítjük 200 °C-ra.  Egy nagy tepsit kikenünk olajjal és a szalonnát egyforma darabkákra vágjuk.  A tésztát lisztezett munkalapon kézzel alaposan átgyúrjuk, majd két részre osztjuk.  Ha csak az egyik darabot sütjük meg, a másikat fóliába csomagoljuk és másnapig a hűtőben tároljuk (esetleg le is fagyaszthatjuk).  Sütés előtt a tésztát akkorára nyújtjuk, mint a tepsink.  A kinyújtott a tésztát a tepsibe helyezzük, megkenjük tejföllel és rászórjuk a szalonnadarabkákat.  Kb. fél óra alatt aranybarnára, ropogósra sütjük.
