Blueberry and mascarpone tart – Mascarponekrémes áfonyás pite

A few years ago on a flight to Europe while reading a magazine – no memory what kind – I discovered a few recipes from the Australian cook Donna Hay.  I am not a magazine fan at all, but upon my return to the USA I went on a quest to find her cooking magazine.  Until a year ago, I diligently bought the issues always one-two months behind the current ones, and sometimes I couldn’t even find them in the various bookstores or magazine stands in Seattle.

Now that Donna has launched her magazine on iPad, I can subscribe to it and not miss an issue.  I love her recipes.  From the 54th issue (December/January 2011) of Donna Hay Magazine comes this simple but very tasty tart.  I know, it’s not blueberry season, and even though this tart is the best with fresh blueberries, you might use frozen berries.  Or you could try to use other types of fresh or canned fruit.

for the sweet shortcrust pastry
all-purpose flour – 225 g (1½ cups)
unsalted butter – 125 g + more for greasing the tart pan
powdered sugar – 80 g (½ cup)
egg yolks – 3
vanilla extract – 2 teaspoons

for the filling
mascarpone – 227 g (8 oz)
lemon rind, grated – 2 tablespoons
powdered sugar – 80 g (½ cup) + more for dusting
blueberries – 340 g (1½ cups)

Sift the flour, cut the cold butter into pieces, and mix them together with the sugar in a food processor or in the bowl of a stand mixer.  (You can also cut the butter into the flour with a knife or pastry blender, then mix in the sugar.)  It should resemble course meal.  Add the egg yolks, vanilla extract, and 1 tablespoon of ice water to make the dough.  Make a ball from it on a floured work surface.  Cover with plastic wrap and refrigerate for about 1 hour.

Heat the oven to 180 °C (350 °F).  Grease a 23 cm (9 inch) diameter tart pan.  Roll out the pastry to 3 mm (0.1 inch) thickness on a lightly floured surface and place it into the pan.  Use a fork to poke holes in the pastry and refrigerate for 30 minutes.  Place parchment paper on top of the dough, fill in with pie weights or dry beans.  Bake for 10 minutes, then remove the weights and the paper.  Return the tart to the oven for 10–12 more minutes and bake until it’s golden.  Let it cool in the pan.

While the tart is cooling, prepare the filling.  Grate the lemon rind and
mix it well with the mascarpone and the powdered sugar. Spread it on the pastry and top it with the blueberries.  Dust with powdered sugar if desired.  Enough for 8-10.

Néhány évvel ezelőtt, amikor Európába repültem, a gépen valamilyen magazint olvasgattam, s ebben fedeztem fel az ausztráliai Donna Hay néhány receptjét.  Bár nem igazán rajongok a magazinokért, elhatároztam, hogy miután visszatértem az Amerikai Egyesült Államokba, megpróbálom megszerezni Donna kéthavonta megjelenő főzőmagazinját.  Meg is találtam egy könyvesboltban.  Aztán évekig szorgalmasan vásároltam, de sajnos mindig egy–két hónapos késéssel, mert az ausztráliai magazinok nem jelentek meg rögtön Seattle könyvesboltjaiban vagy újságárusainál.  Néha nem is tudtam megszerezni az épp aktuális számot.  Aztán Donna egyszercsak piacra dobta digitális magazinját iPad–re, s így most már mindennemű késés nélkül jutok hozzá a Donna Hay Magazine számaihoz.  Nagyon kedvelem Donna receptjeit.  Ennek az egyszerű, de nagyon finom pitének a leírása az 54. (decemberi–januári) számban jelent meg.  Tudom, most nincs áfonya szezon, s bár ez a pite friss áfonyával a legjobb, fagyasztottat is használhatunk, esetleg másfajta friss gyümölcsöt vagy akár befőttet.

az édes porhanyós tésztához
liszt – 225 g
vaj – 125 g + egy kevés a tortaformához
porcukor – 80 g
tojássárga – 3
vanília kivonat – 2 teáskanál

a töltelékhez
mascarpone sajt – 227 g
reszelt citromhéj – 2 evőkanál
porcukor – 80 g + egy kevés a pite tetejére
áfonya – 340 g

A lisztet átszitáljuk, belevagdaljuk a fagyos vajat, borsónagyságúra morzsoljuk a liszttel, majd hozzákeverjük a cukrot.  (Morzsolhatjuk kézzel, két kés segítségével vagy a mixer keverőtáljában.)  Hozzáadjuk a tojássárgákat, a vanília kivonatot, 1 kanálnyi jéghideg vizet és gyors mozdulatokkal összegyúrjuk.  Cipót formálunk belőle, fóliába csomagoljuk, s legalább egy órán át a hűtőszekrényben pihentetjük.

A sütőt előmelegítjük 180 °C-ra.  Kivajazunk egy 23 cm átmérőjű alacsony tortaformát.  A tésztát enyhén lisztezett gyúródeszkán kb. 3 mm vastagságúra kinyújtjuk, kibéleljük vele a formát, villával megszurkáljuk és 30 percre a hűtőbe tesszük.  Aztán a tésztát letakarjuk sütőpapírral, tetejére száraz babot rakunk (vagy speciális kerámia pitesúlyokat), s 10 percig sütjük.  Aztán eltávolítjuk a babot (vagy a súlyokat) és a sütőpapírt.  A pitét visszatesszük a sütőbe és további 10–12 perc alatt készre sütjük.  A formában hagyjuk kihűlni.

Amig a pite hűl, elkészítjük a tölteléket.  A reszelt citromhéjat jól elkeverjük a mascarpone sajttal és a porcukorral.  A kész tésztára simítjuk és megszórjuk az áfonyával.  Meghinthetjük porcukorral.  A pite elég 8-10 személynek.
